Jenny Dawn Cellars LLC will be an artisan winery located in the heart of downtown Wichita, KS. They will produce wines made from grapes grown by the best viticulturist in the nation as well as craft specialty fruit wines made from produce locally grown in the Urban Orchard.
Jennifer McDonald, Founder of Jenny Dawn Cellars LLC. She grew up in Nebraska but since 2007 has called Wichita, KS home. She spent the last 10 years working in the Human Resources and Recruiting field for various companies. One of those companies was in the agriculture industry which sparked her interest as Jennifer has a passion for gardening, growing fruits and vegetables as well as wine making.
Jennifer started making wine back in 2014 with a small batch of Riesling and Pinot Noir. She decided to enroll in the Kansas State University Masters of Agribusiness program to hone her business and leadership skills as well as learn more about the agriculture industry in general. Jennifer graduated with her degree in May 2016 and her thesis was titled, Factors Influencing Premiums on Local Wines: An Exploratory Assessment of Kansas Wine.
The goal of the research was to inform a business plan which Jennifer was able to complete and is currently working the steps to become a licensed winery in Kansas. Jenny Dawn Cellars won’t be just any winery, it will be an urban winery located in the heart of downtown Wichita, KS. Jenny Dawn Cellars will produce wines from grapes sourced from the best growers in the nation as well as make a specialty apple wine from locally grown apples from the Urban Orchard.
Jenny Dawn Cellars Vision
The vision for Jenny Dawn Cellars is to capture the experience of visiting a farm winery where people learn about how the wines are made, watch wine production and chat with the winemaker, but placing this winery in an urban setting. Jenny Dawn Cellars will be a boutique winemaking production facility, tasting room and orchard all located in downtown, Wichita, KS.
Jenny Dawn Cellars Research
Since January 2016, Jennifer McDonald has been conducting wine market research through wine tasting focus groups which later became known as Wineucation. Data was collected from 80 participants, 20 wines were sampled which 5 were made by Jennifer McDonald under the brand, Jenny Dawn Cellars. Participants tasted the wines and rated them on a scale of 1-5 based on appearance, aroma, body, taste and finish.
The results are outlined in the tables below.
Jennifer McDonald has started a crowdfunding campaign with a goal of raising $10,000. The fund raised will be used to cover the costs associated with planting an orchard: purchasing land, clearing and tiling the land, removing dead trees, purchasing fruit trees, fencing, picnic tables and other farm equipment.
